We use a flour blend obtained by milling selected tender grains of Italian origin. This combined with a stone-ground organic durum flour from Senatore Cappelli wheat helps to create our unique Neapolitan dough. Just salt, water and yeast and bobs your uncle. These 5 simple ingredients go together (alongside a whole bunch a love and attention) to create our recipe and we are very proud of its light, crispy and super tasty flavour.
We use the best San Marzano tomatoes on our pizzas. San Marzano tomatoes are the most famous plum tomato to come out of Italy. They are grown in the rich volcanic soil at the base of Mount Vesuvius, which gives them a sweet flavour and low acidity, perfect for our Neapolitan pizzas. We also only use fresh marzanino tomatoes in our salads, a smaller vine tomato, which works perfectly with our high quality Italian cheeses and meats. Fresh as a daisy.
We use the best fior di latte mozzarella for the main event, which is perfect for getting the perfect melted finish on our crispy pizzas. Our fresh burrata cheese comes from Puglia and has a creamy, mild and delicate taste, perfect with those fresh vine tomatoes we were just showing off about. We use grana padano cheese on our pasta dishes and are proud to offer both vegan and vegetarian alternatives to these across our menu.
Our beautiful fresh pasta is handmade locally and delivered to us daily by our supplier. Our pasta options are changed regularly based on seasonality of products. Our filled pastas are made using free range eggs and organic meat. Nothing but the best, did we mention that before?
We use the finest chicken, steaks and lamb from our butcher that are delivered to us daily from the midlands. They are a family business established in 1933 by Aubrey Allen in a humble butcher’s shop in Coventry. Our pepperoni and ‘nduja sausages are made using high quality cuts of pork in Calabria and are cured to give an amazing spicy flavour.
We use the fresh ingredient company, Belazu to source our oils, vinegars and olive mix. Belazu ensure the highest quality of all their Mediterranean ingredients. Our olive oil is a single varietal extra virgin stone-crushed from Arbequina olives. Our fab Italian olive mix consists of a mix of Bella di Cerignola, Nostraline, Nocellara and Purple Gaeta from various parts of Italy.
Our wines are from around Italy, with our pinot grigio, and pinot blush coming from Veneto, a wine region in north-eastern Italy. Our house white, Grillo coming from Sicily and our beautiful peppery house red coming from the Emilia-Romagna region, home to all of our fave foodie spots in Italy. Both our Barbera and Gavi are from Piedmont, in the North West corner of Italy (our personal favourite wines on the list). We selected our wine list based on their ability to match all of the fresh dishes on the menu and we hope you love drinking them as much as we do!
